Jaggery Pudding


3 cup Coconut milk [first extract]
3 cup Coconut milk [second extract]

4 Eggs
500 g Jaggery
3 tbs gelatin
1/2 tsp  Nut Meg 

1 Tsp Vanilla 
few cashew nuts & sultana for decoration    


Mix the coconut milk and grated jaggery together and bring to a boil.  Stir continuously until jaggery is dissolved. Do not over boil.  Whisk the eggs . Dissolve the gelatin in hot water and add it to the milk mixture, then add whisked eggs and beat the mixture  well. Add nutmeg & Vanilla.  Put the mixture in a greased bowl & leave to set in a refrigerator. 
Turn over & serve. This will set as two layers. Of course it's very delicious.
