UPUMA



UPUMA    


Ingredients:


1 cup Rava / Sooji (Semolina) 
25 gms fried Cashew Nuts (optional)
1 inch Ginger chopped
1 chopped Onion
3 Green Pepper cut sideways
1 Potato chopped
1 Red pepper cut sideways
2 Carrot chopped
1/4 cup Green Peas frozen or fresh
1 tsp Mustard Seeds
1 tsp Urad Daal
1 tsp Channa Daal
Salt to taste
1/2 tsp Turmeric Powder
Chili powder to taste (optional)
50g of sultana .
2 tblsp Oil
Few curry leaves
Finely chopped coriander leaves
1 tblsp Ghee or butter
Lemon juice to taste

How to make rava uppma:



• Sift rava through a muslin / cheese cloth or very fine sieve.
• Heat 1tbsp. pure ghee / unsalted butter and fry rava ,on a moderate heat, stiring constantly to light brown color and set aside.


• Now heat 2 tbsp oil in a pan and add mustard seeds and allow them to splatter.


• Add the daals : channa & urad & curry leaves to it and fry till they turn red. ( if you can’t get dhal pl. omit as it’s optional. ) 


• Add onion, ginger and green chilies. Sauté for 2-3 minutes.
• Add all the vegetables, turmeric & chili powder, and salt to taste.


• Now add 3 cups of water and cover the pan and allow it simmer on low heat until the vegetables are done.


• Add the fried rava to it stirring constantly till it becomes little thick.


• Take off from the heat and lemon juice if desired.


• Serve hot garnished with cashews and coriander leaves.


• For better taste you can add minced chicken , bacon ends & few eggs beaten to the vege mixture.









උප්පුමා 

අවශ්‍යය ද්‍රව්ය - 


රුලං  කෝප්පයක්

බැදපු කජු මද ග්‍රෑම් 25 ක්

අඟලක පමණ ඉඟුරු කැබැල්ලක් හීනියට කපා හෝ හොඳින් තලා.

බී ලූණු ගෙඩියක් හීනියට ලියා ගන්න.

ග්‍රීන් පෙපර් නැමති සලාද වලට ගන්න කොලපාට ලොකු මිරිස් 

ගෙඩියක් කුඩා කොටු කපා ගන්න.

අල ගෙඩියක් කුඩා කොටු කපා ගන්න.


රතු සලාද මිරිස් ගෙඩියක් කුඩා කොටු කපා.   ( රෙඩ් පෙපර් )

කැරට් ගෙඩි දෙකක් කුඩා කොටු කපා.


ග්‍රීන් පීස් ඇට කෝප්ප 1/2 ක් පමණ

අබ ඇට තේ හැඳි 1 ක්

උළුඳු ඇට තේ හැඳි 1 ක් 

කඩල පරිප්පූ තේ හැඳි 1 ක්

පදමට ලුනු

කහ කුඩු තේ හැඳි 1/2 ක් 

මිරිස් කුඩු අවශ්‍යය පමණට.

මුද්‍රප්පලම් 50g  ක් 


තෙල් මේස හැඳි 2 ක්


කරපිංචා අවශ්‍ය ප්‍රමණයට්.

පොඩියට කපා ගත් කොත්තමල්ලි කොල

ගී හෝ බටර් මේස හැඳි 1 - 2 ක්'


දෙහි ඉස්ම අවශ්යය පදමට


උප්පුමා සාදන ක්‍රමය -  


• බටර් හෝ ගී දමා රත්වූ පසු කබලෙ රුලං බැද ගන්න. 

• අබ ඇට පුපුරන තෙක් බදින්න . 


• එයටම  පරිප්පු, කඩල පරිප්පු උලුඳු ඇට වැනි දේ   දමා   බැද 

ගන්න. 



සියළුම එළවළු තෙම්පරදුවට එක් කරන්න

• වතුර කෝප්ප 3 ක් දමා එළවළු  යන්තම් තැම්බෙන්නට හරින්න.

• එයට රුලං එක්කට යන්තම් තැම්බෙන විට ලිප නිවා වසා තබන්න. 

•ලිපෙන් එළියට ගෙන දෙහි ඇඹුල් ස්වල්පයක් මිශ්‍ර කරගන්න. 


උණුවෙන් ම එයට කජු හා මුද්‍රප්පලම් අනෙකුත් ද්‍රව්යය එක් කරන්න. 


• රසවත්වම අව්ශ්‍යය නම් එයට බේකන් කැබලි , කුකුලු මස් හා 

සොසෙජස්  හෝ බිත්තර ද එක් කරගන්න පුලුවන්. 

බොහෝ විට මෙය එළවළු පමණක් යොදා සාදා ගන්නා ඉන්දියානු කෑමකි.

  3. One of my tamil friends makes uppama. Is it a tamil thing? I really like Rulan. My mother makes rulan toffee from it.

    1. Yes, Sayuri, it comes from India. But I tasted it first from one of my mothers Zambian friend. Mrs.Tembo she made it with meat. It was very tasty.
